Zin Shofu Wheat Paste

The Zin Shofu paste has been manufactured in Japan for generations by a company specialized in precipitated wheat starch manufacturing.

As it is completely gluten free, the cooked paste is especially thin.


Preparation

The mix, one part Jin Shofu to five parts water, must be cooked in a water bath (an electric gravy boat can be used) for an hour. This technique ensures the outstanding quality of the paste and enables reversible fungi-free bonding. Some people make the powder swell in cold water for 24 hours before cooking it.
